One Pan Bolognese Lasagne
INGREDIENTS
• 4 garlic cloves
• 1 onion
• 5 cups veggies of choice (carrot, broccoli, cauliflower and zucchini work well)
• 1 tbsp extra-virgin olive oil
• 500g beef mince
• 680ml tomato passata
• ½ tsp dried thyme
• ½ tsp dried parsley
• ½ tsp dried basil
• ½ tsp dried oregano
• ½ tsp coconut or brown sugar (optional)
• Salt and pepper
• 2 cups stock or broth
• 250g lasagne sheets
• 1 cup grated cheese (cheddar or mozzarella)
METHOD
1. Blitz the garlic, onion and remaining veggies in a food processor until finely ground.
2. Add the olive oil to a large saucepan over high heat.
3. Add the blended veggies to the saucepan and sauté for about 5 minutes, stirring regularly. Add the mince and stir until browned.
4. Stir in the passata, herbs, sugar (if using) and stock. Season if desired.
5. Place the lid on the saucepan, turn the heat down to medium and let the sauce simmer for 20 minutes, stirring every 10 minutes or so.
6. Snap 250g of lasagne sheets in half and submerge them completely into the sauce.
7. Place the lid back on and cook as per the lasagne sheet packet instructions — roughly 25 minutes.
8. Top with grated cheddar or mozzarella, then bake under the grill for 5 minutes, or simply replace the lid and let it melt. Devour and enjoy!
